Chicken Fajita Stuffed Onion Rings Recipe

INGREDIENTS (Serves 6-8)
2-3 medium-sized, sweet onions
2 c. cooked, shredded chicken
1 c. shredded cheddar
¾ c. cream cheese
1 ½ Tbsps. fajita seasoning mix
1 c. flour
2 eggs, beaten
2 c. crushed nacho cheese Doritos
Sour cream for serving

DIRECTIONS
Step 1: Slice onions into ½-inch slices.  Separate the rings and lay them out on baking sheet.

Step 2: Mix the chicken, cheddar, cream cheese, and fajita seasoning together.

Step 3: Spoon and pat mixture into the rings, ensuring the mix is flush with the top of the rings and is tight against the sides of the onion. Place in freezer for 1 hour.

Step 4: Dredge frozen onion rings in flour, then in the egg, and then in the crushed Doritos until coated.

Step 5: Heat oil to 365 degrees and drop rings into the oil. Allow to cook until golden brown, flipping to ensure all sides are cooked.

Step 6: Serve with sour cream.
