Grilled Chicken Bacon Ranch Pizza Recipe

Ingredients (Serves 8)
1 refrigerated pizza crust
1 lb. chicken (I used thighs)
1 lb. bacon (cut into 1-inch pieces)
8 oz. Ranch dressing (or make your own below)
2 c. mozzarella
Pesto (optional to top)

Ingredients for Homemade Ranch Dressing
1 c. mayo
1 c. shole milk
3 tbsps. Ranch dressing mix

Directions
Step 1: Prepare the Ranch dressing by mixing mayo, milk and Ranch dressing mix with an emersion blender or whisk. Refrigerate to set.

Step 2: Cook bacon to desired doneness. (I’m not a crispy bacon person so I cook mine medium.) Place in a paper towel lined bowl to drain grease.

Step 3: Grill chicken until the internal temperature is 165 degrees for white meat and 175 degrees for dark meat. When cool enought to handle, chop into smaller pieces. *Laurie’s Tip: I use chicken thighs as they are very economical and taste great. I also don’t buy boneless, skinless chicken. It costs significantly more and I’m pretty good at deboning and removing skin. But if you choose, you can buy boneless and skinless chicken for convenience.

Step 4: Generously spray a cookie sheet, pizza pan or pizza stone with cooking spray. Spread the dough out to the edges forming a crust. Prebake crust at 450 degrees for 5 -6 minutes for a crisper crust that doesn’t absorb all the moisture of the toppings.

Step 5: Spread Ranch dressing evenly over the crust and top with chicken, bacon and cheese.

Step 6: Bake pizza for another 10-15 minutes until the crust is browned and the cheese is melted and beginning to brown as well.

Optional Step 7: Top with pesto and serve.
