Sicilian Chicken Recipe

INGREDIENTS (Serves 2-4)

5 cloves clove garlic, minced
1 cup dry bread crumbs
½ cup grated Romano cheese
¼ cup minced parsley and basil
Salt & pepper
1 lb. chicken thighs and/or wing portions
½ cup extra virgin olive oil
1 lemon, quartered 


DIRECTIONS

Step 1: Preheat oven to 350° F.

Step 2: Mix breadcrumbs in a food processor with cheese and 6 cloves garlic. Place in mixing bowl and add minced parsley and basil.

Step 3: Season oil with 2 cloves minced garlic. 

Step 4: Pat chicken with a paper towel. Dip each chicken piece in the garlic oil, then in the bread crumb mixture. Lightly season with salt and pepper. 

Step 5: Arrange the coated chicken in an oiled baking dish or Dutch oven, and top with any remaining bread crumb mixture. Drizzle with extra virgin olive oil.

Step 6: Bake in preheated oven for about 25 minutes or more until the chicken is crispy and lightly golden brown on the outside and the internal temperature of the chicken reaches 165°F. 

Step 7: Remove from oven, spritz with lemon and serve.
