Spicy Bean & Sausage Soup Recipe

Ingredients (Makes 4-5 servings - can be multiplied for your needs)

2 (15 oz.) undrained cans pinto beans (can substitute black beans if desired)
2 ½ c. water (divided)
2 c. diced onions
1 c. beer (I use a light lager but it’s your preference)
1 tsp. cumin
¼ tsp. salt
6 oz. diced or halved slices of kielbasa (or smoked sausage of choice)
1 T. olive oil
4 cloves minced garlic
1 tsp. chili powder
1 T. hot sauce (or more if desired like I do!)
¼ tsp. black pepper

Directions

Step 1: Place 1 can of beans and ½ c. water in blender or food processor and blend until smooth.

Step 2: Heat oil on med/high. Sauté onion and garlic until tender.

Step 3: Add bean puree and the rest of the ingredients (MINUS the sausage). Bring to a boil. Cover and simmer for 5 minutes.

Step 4: Stir in kielbasa/sausage and cook another 4-5 minutes until heated. Season with additional hot sauce and garnish with green onion if desired.
