Bruschetta Grilled Chicken Thighs on Angel Hair Pasta Recipe

Ingredients (Serves 4)

4-5 boneless, skinless chicken thighs
6 Roma tomatoes (coarsely chopped)
4 Tbsp. fresh chopped basil
4 cloves crushed garlic
2 Tbsp. olive oil (plus more for grilling)
Salt & pepper to taste
Fresh shredded Parmigiano Reggiano cheese
6 oz. angel hair pasta

Directions

Step 1: Mix chopped tomatoes, basil, garlic, 2 Tbsp. olive oil, salt and pepper together.

Step 2: Refrigerate for 1 hour to allow flavors to infuse.

Step 3: Brush chicken liberally with olive oil, salt and pepper. Heat grill to medium heat and grill chicken thighs until they reach an internal temperature of 165 degrees - about 4 minutes per side depending on the thickness. Remove and allow to rest; then slice.

Step 4: Meanwhile, cook angel hair pasta to package directions using salted water. Drain and add a bit of olive oil so the noodles do not stick.

Step 5: Transfer pasta to a large bowl and pour 1/2 of the bruschetta mix over the pasta. Toss to coat.

Step 6: Plate by laying down a bed of the pasta mix, top with sliced chicken thighs, cover with more of the bruschetta and grate fresh cheese over the entire meal. Garnish with fresh parsley if desired.
