Blue Ribbon Banana Bread Recipe

Ingredients
3 ripe bananas (mashed)
1 stick unsalted butter (softened)
2 eggs
1 tsp. vanilla extract
2 cups flour
1 cup sugar
1 tsp. baking soda
1/2 tsp. salt

Directions
Step 1: Preheat oven to 350°F. Spray a bread pan with nonstick cooking spray.

Step 2: Mix wet ingredients (bananas, butter, eggs and vanilla) in a mixer until creamy. *Laurie’s Tip: My bananas were pretty soft so I sliced them and let the mixer mash them. If your bananas are still a little firm, mash with a fork.

Step 3: Alternately mix in dry ingredients.

Step 4: Pour the mixture into the prepared pan and spread it around into one even layer. Bake for 60-75 minutes until you can poke the loaf in the center with a knife and it comes out clean.

Step 5: Remove from pan when cool enough to handle and allow loaf to cool on a cooling rack.

*Laurie’s Optional Idea: If you’re a fan of walnuts in your bread, you may add 3/4 c. when mixing.

I call this my “Blue Ribbon Banana Bread” because I got a blue ribbon with this recipe in 1981 at the Plymouth County fair in LeMars, Iowa!
