Sweet & Sour Salad w/ Grilled Shrimp Skewers Recipe

Ingredients (Serves 3)

Ingredients

1 1/2 lbs. large, raw shrimp (peeled & deveined)
1 bunch romaine lettuce
1 can mandarin oranges (drained)
1 c. sliced almonds
1 pkg. ramen noodles (broken up)
4 T. butter
1 bunch grapes
For Dressing:
1/3 c. vegetable oil
½ c. white sugar
1/3 c. balsamic vinegar
1 T. soy sauce

Directions

Step 1: In a medium sauté pan, toast ramen and almonds over medium heat. Be careful not to burn! Drain on paper towel and cool.

Step 2: Shake dressing ingredients to mix and refrigerate until use.

Step 3: Drain oranges and cut grapes into halves.

Step 4: Skewer raw shrimp and grill on oiled grates (so as not to stick) over medium/high heat approximately 2 minutes per side until no longer translucent.

Step 5: Toss lettuce, dressing, fruit, and 3/4ths of the toasted ramen and almonds to coat. Plate salad, sprinkle with remaining toasted almonds and ramen, and shrimp skewers and serve.
